Stefani Jo Schramm Mortensen graduated from Brigham Young University in 2015 with a bachelor's degree in dance education.

In 2013, Mortensen was a participant in Buckaroo: Cowboy Poetry in Motion project, which was funded by a grant from the Laycock Center and directed by faculty Marilyn Berrett and Pam Musil. The project brought together student musicians, poets, and choreographers, as well as professional cowboy poets, to produce an evening-length themed dance concert. The following year, Mortensen was the student asked to accompany Berrett and Musil to the NDEO Conference in November to participate in the presentation about the project and share her perspective as a student contributor.

In 2014, Mortensen received funding from the Laycock Center to put together her senior capstone project. The project involved a collaboration of seven dancers, two visual artists (Danny Russon and Dallin Cheung) and one musician (Nathan Innis). The piece was performed twice, on August 8th and 9th. Mortensen reported on the process and success of the project and the collaboration at the National Dance Education Organization's Annual Conference in November of that year.
